Made exactly as they do in Puglia, our burrata replicates old-world fashion by stretching curd into mozzarella and filling it with a luscious creamy center. The soft center -- stracciatella, made of cream and strands of mozzarella -- gives this cheese its distinct flavor. Cut it in half in a deep plate with fresh tomatoes and fragrant basil, or with peaches and rosemary. Scoop it up with crusty bread and open a bottle of wine.
